POETs Progressive Dinner -P* Off Early, Tomorrows Saturday!
Did the POETS progressive dinner with 7 mates last Friday. Wow. What Heritage has on offer there is a brilliant and unique initiative. I was blown away as were my companions. I was a bit nervous about how it would all pan out but you massively exceeded my expectations. Entrée served in the fields at sunset was one thing. But the candle-lit dinner in the gorgeous old room accompanied with fine wine and the banter/laughter of a gaggle of old mates will burn in the memory for many a year. Food for the soul! And to top it off Therese and Rob’s service was SEVEN star! This was my all time most enjoyable/memorable winery visit/experience!, Patrick.

“Had a wonderful 2 nights staying at The Cottage. Very comfortable, cosy, heritage accommodation with a small kitchenette should one want to cook breakfast or other meals. However, there are so many ‘foodie’ options, why would you?
Hosts Therese and Robert made us feel most welcome and walked us through the elements of wine making and wine drinking. Long-time local Tessa was able to provide the low-down on what else the Granite Belt had to offer.
We highly recommend the Wine & Food paired lunch, giving us a chance to enjoy the range of wines on offer from Heritage Estate. The food was of excellent quality and the whole sitting good value for the price. The winery progressive dinner (POETS) on a Friday night gave us a chance to see the vines and the workings of the winery while consuming excellent food and wine at various locales.
The wines themselves are of exceptional quality and well deserving of the Halliday “5 Star Winery” award. They showcase the variety of grapes suitable for the area and terroir and the skill and care a small winery brings to production.
Heritage winery was a “gem” of a stay in the Granite Belt. We will be back!”

What is the role of terroir in wine making?
Learn about it from the ground up
Vintage and harvest time are crucial aspects of the wine-making process. The quality and flavor of the grapes determine the quality of the wine, so it’s important for winemakers to pick the grapes at the right time. Here are some reasons why vintage and harvest time are so important:
- Grapes mature at different rates: Different grape varieties mature at different times, so winemakers need to be careful to pick each variety at the right time to ensure its flavor profile and quality are maintained.
- Climate and weather: The climate and weather conditions during the growing season can greatly affect the grapes and the wine they produce. A warm and dry growing season can lead to higher alcohol content and bolder flavors, while a cool and wet season can result in more delicate and nuanced flavors.
- Wine style: Different wine styles require different ripeness levels of the grapes. For example, red wines are often made from riper grapes than white wines, as the skins of the red grapes need to be more mature to impart the desired color and flavor.
- Timing is key: Harvesting the grapes too early can result in underripe and underdeveloped flavors while harvesting them too late can lead to overripe and raisined flavors. The timing of the harvest can therefore have a big impact on the final flavor and quality of the wine.
In summary, vintage and harvest time play a crucial role in the wine-making process and can greatly affect the final quality and flavor of the wine. That’s why winemakers are very careful and selective when it comes to the timing of the harvest.

“Salt of the Earth” Winemaker, Stephen Oliver @ Heritage Estate
Heritage Winemaker in Full Flight
Stephen dreamed of becoming a winemaker. He began his journey as a cellarhand at a small winery, called Heritage Estate in 2001, learning the ins and outs of the trade and honing his skills under the illustrious winemaker Jim Barnes.
Despite his passion for winemaking, Stephen’s true calling was as a firefighter. He spent his free time volunteering at the local fire department, always eager to help out in any way he could. Years passed and Stephen’s hard work and dedication paid off. He was offered a job as a winemaker at a prestigious winery and jumped at the opportunity. He worked tirelessly to create delicious, high-quality wines and quickly made a name for himself in the industry. In 2009 Stephen Oliver was named Finalist in the prestigious competition, Young Winemaker of Australia.
But even as he achieved success in the winemaking world, Stephen never forgot his passion for firefighting. He continued to volunteer at the local fire department, and in 2019 all his skills were tested. The infamous bushfires of Stanthorpe had the town under threat over several fearsome days of ferocious flames. Stephen was Commander in Chief and lead the crews on the hills above Stanthorpe. In recognition, he was elected to Regional Deputy of Rural Operations.
Years passed, and Stephen became one of the most respected winemakers in the region. But one day, the winery where he got his start as a cellarhand reached out to him. They were in dire straits and needed a new winemaker to save the vintage. Stephen knew he had to help, so he left his current job and returned to the winery where he began his journey.
He worked tirelessly to bring the winery back to its former glory, and with the help of his old friends and colleagues, he was able to do just that. As he stood in the vineyard, looking out at the grapes that he had helped to nurture, Stephen knew that he had truly come full circle. He had achieved his dream of becoming a winemaker, and had also been able to pursue his passion for firefighting. And he knew that, no matter what challenges came his way, he would always be ready to face them head-on.
As winemaker, Stephen is responsible for overseeing the production of wine from grape cultivation to bottling. This includes tasks such as selecting and managing grape vineyards, supervising the grape harvesting and crushing process, monitoring fermentation, and aging the wine in barrels. He is also responsible for blending different grape varieties and batches of wine to create a consistent product. Additionally, Shephen is involved in marketing and sales, as well as maintaining the overall operations of the winery. A winemaker’s life can be challenging as it involves long hours, physical labor and the need to be able to adapt to changing weather conditions and market demand. However, it can also be rewarding as it allows for creativity, experimentation and a deep connection to the land and its produce.
