Description
Chardonnay (80%) and Pinot Noir (20%) are picked in the cool of the night to help retain freshness, with the Pinot handled oxidatively to help lower the red colour pigments and both are fermented warm to add complexity and mouth feel. A secondary fermentation in tank under pressure, the Charmat technique, adds to the tiny bubbles and creamy texture.
Aromas of fresh cut lemon and subtle green apple surrounded by rising dough and a generous mousse reveals a tight and complex palette of fresh buttered toast and a citrus freshness of a pale straw appearance.
This sparkling is dry, and light in body.
